สุขสันต์วันลอยกระทง

Happy Loy Krathong

On the full moon of the twelfth lunar month, Thai families float krathongs of leaves, flowers and candles on the water, to let go of the old year’s troubles and to give thanks. Wishing you and your family light, luck and good food.

Why “Noi”?

In Thai, noi means small. It is also my nickname, and I am small too.

I am from Thailand, where the best food is often the smallest: little dishes bought from a street stall and eaten as you walk. That is the idea here. Plenty of small plates, shared around the table, so you taste more.

Every time I cook for friends and family, someone tells me to open a restaurant. So I am starting small, which seems right.

  • Eight years cooking in school kitchens, feeding hundreds a day
  • Food hygiene and allergen training certificates
  • Already cooking for private parties and school events by word of mouth
